Preheat your oven to 400°F. In a medium bowl, stir together the chopped spinach, crumbled feta, softened cream cheese, minced garlic, lemon zest, oregano, and black pepper until it forms a thick, scoopable filling.
Skip adding salt to the filling — feta brings plenty of salty punch on its own. Taste it once (quality control, obviously) and thank me later.

Cut a Pocket in the Chicken
Lay each chicken breast flat on a cutting board. With a sharp knife, cut a horizontal pocket into the thickest side, stopping about 1 inch from the far edge so the pocket stays hinged. Gently pound each breast between two sheets of plastic wrap to an even ¾-inch thickness.
Pop the chicken in the freezer for 10–15 minutes before cutting. Slightly firm, cold meat slices cleanly instead of wobbling around like a water balloon.

Season and Stuff the Chicken
