Preheat and Prep the Veggies
Preheat your oven to 400°F (200°C). Chop the carrots, parsnips, and red onion into 1-inch chunks. Place them in a large bowl, drizzle with the olive oil, salt, and pepper, and toss to coat. Spread them out evenly on a large, rimmed baking sheet.
Give those root veggies some personal space! If they are piled on top of each other, they'll steam instead of roast, and nobody wants soggy carrots on a Tuesday night.

Mix the Honey Mustard Magic
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, minced garlic, dried thyme, and a tiny pinch of salt and pepper until the mixture is completely smooth and glossy.
If your honey is crystallized and acting stubborn, just pop the jar in a bowl of warm water for five minutes. It’ll melt right down without you losing your mind or making a sticky mess.

Spread the chicken and vegetables evenly in a single layer on your baking sheet. Roast in the preheated oven for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the veggies are fork-tender.
Buy a cheap digital meat thermometer if you don't own one. It’s the single best investment you can make for your kitchen, ensuring you never serve dry chicken or undercooked meat again!

Glaze and Broil
Carefully remove the pan from the oven. Brush the remaining half of the honey mustard glaze generously over the chicken and veggies. Turn the broiler on high and broil for 2 to 3 minutes until the edges of the chicken and veggies are beautifully charred, sticky, and caramelized.
Keep a hawk's eye on it while the broiler is on! The difference between "perfectly caramelized" and "burnt to a crisp" is about thirty seconds.
