Substitutions:

  • Protein: Ground pork, turkey, or beef work great. You can even use firm tofu for a vegetarian version.
  • Basil: Can't find Thai basil? Regular sweet basil works, though the flavor will be milder. Add a few mint leaves to mimic Thai basil's complexity.
  • Chilies: Too spicy? Use bell peppers instead, or just reduce the amount. Not spicy enough? Add a splash of sriracha.
  • Fish sauce: For vegetarians, use soy sauce or coconut aminos, though the flavor won't be quite the same.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat or microwave for 1-2 minutes. The basil will lose some vibrancy, but the flavor holds up well.

Make-Ahead: You can mix the sauce up to 3 days ahead and store it in the fridge. Chop your garlic and chilies the night before, too. When you're ready to cook, it's literally just dump, stir, and done. Perfect for those "what's for dinner?" panic moments at 5 PM.
