Substitutions:

  • Scotch Bonnet Peppers: Can't find them? Habaneros are the perfect substitute with similar heat and flavor. For milder chicken, use jalapeños or even bell peppers with a pinch of cayenne.
  • Fresh Thyme: Dried thyme works fine—use 2 tablespoons dried for every 1/4 cup fresh.
  • Soy Sauce: Coconut aminos make a great gluten-free alternative.
  • Chicken Pieces: Bone-in, skin-on thighs and drumsticks are ideal, but you can use chicken breasts (reduce cooking time to 30-35 minutes).

Storage: Store leftover jerk chicken in an airtight container in the refrigerator for up to 4 days. The flavors actually improve overnight!

Make-Ahead: Marinate the chicken up to 2 days in advance. You can also fully cook the chicken, then reheat in a 350°F oven for 15-20 minutes until warmed through.

Freezing: Freeze cooked jerk chicken for up to 3 months. Thaw overnight in the refrigerator before reheating.
