Substitutions:

  • Chicken: Swap breasts for boneless, skinless chicken thighs. They are a bit more forgiving and stay juicy, but add 2-3 extra minutes to the searing time.
  • Dairy-Free: Use full-fat coconut milk or a dairy-free heavy cream alternative, and swap the parmesan for a dairy-free hard cheese.
  • Veggies: Not a fan of spinach? Kale works wonderfully, just massage it a bit first, or use chopped sun-dried tomatoes and artichoke hearts.

Storage: Store leftovers in an airtight container in the icebox (fridge) for up to 3 days. Reheat gently in a skillet over low heat with a splash of milk or broth to bring the sauce back to life.
