Substitutions:

  • Not a fan of corn tortillas? You can absolutely use flour tortillas, just tear them up the same way.
  • Swap the black beans for pinto beans, or use diced bell peppers instead of corn.
  • Make your own enchilada sauce if you're feeling adventurous, but the canned stuff is a wonderful time-saver!

Storage:

  • Keep leftovers in an airtight container in the fridge for up to 4 days.
  • This freezes beautifully! Wrap individual portions tightly and freeze for up to 3 months. Thaw in the fridge overnight before reheating.

Make-Ahead:

  • You can assemble the entire casserole (Steps 1 and 2) the night before. Cover it tightly with foil and keep it in the fridge. When you're ready to eat, just add 5-10 minutes to the baking time since it's going in cold.
