Note
  • Substitutions: Swap feta for goat cheese or a ricotta-parmesan mix. No fresh spinach? Use ½ cup thawed frozen spinach, squeezed bone-dry in a clean towel. Love add-ins? Fold in ¼ cup chopped sun-dried tomatoes, artichoke hearts, or a few sliced kalamata olives.
  • Storage: Keep cooked chicken in an airtight container in the fridge for up to 4 days. Freeze cooked (or raw stuffed) breasts wrapped tightly for up to 3 months.
  • Make-Ahead: Mix the filling up to 2 days ahead, or stuff the breasts in the morning and refrigerate until dinner. Sear and bake right before serving.
  • Reheating: Warm in a 300°F oven, covered with foil, for 10–15 minutes. Microwave in a pinch at 50% power — full power turns chicken into a rubber eraser.
  • Serving Ideas: Lemon potatoes, Greek salad, rice orzo, or a big dollop of tzatziki make this a full Mediterranean spread.
