2large boneless, skinless chicken breasts (sliced in half horizontally to make 4 thin cutlets)
1/2tsp salt
1/2tsp black pepper
1/2cup all-purpose flour
For the Lemon Caper Sauce:
3tbsp olive oil
2tbsp unsalted butter
3cloves garlic, minced
1cup low-sodium chicken broth
1/3cup fresh lemon juice (about 2 lemons)
3tbsp capers, drained
4tbsp cold unsalted butter, cut into small cubes
For the Garnish:
2tbsp fresh parsley, chopped
1lemon, sliced into wheels

Prep and Pound the Chicken
Place your chicken cutlets between two pieces of plastic wrap. Use a rolling pin or a heavy skillet to gently pound them until they are about 1/4-inch (6mm) thick. Season both sides evenly with salt and pepper.
Don't go wild with the rolling pin! You just want them to be an even thickness so they cook at the same rate. Nobody likes a chewy, uneven chicken dinner.

Dredge in Flour
Pour your seasoned flour into a wide, shallow plate. Press each chicken cutlet into the flour, making sure both sides are lightly coated. Shake off any extra flour before setting them on a clean plate.
