Substitutions:

Storage:

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors actually get better on day two! Reheat in the microwave or on the stovetop with a splash of water or broth to keep it moist.

Make-Ahead:

You can prep everything the night before—slice the veggies, mix the seasoning, and store them in separate containers in the fridge. In the morning, just dump everything in the slow cooker and turn it on. You can also freeze the uncooked ingredients (chicken, veggies, seasoning) in a freezer bag for up to 3 months. Thaw overnight in the fridge before cooking.
