  • Substitutions: Swap olive oil for softened butter if you prefer. Carrots and potatoes can trade places with parsnips, sweet potatoes, red onion wedges, or Brussels sprouts. No lemon? Use quartered onion. Only dried herbs for the veggies? Use half the amount.
  • Storage: Keep leftovers in airtight containers in the fridge for 3–4 days. Freeze shredded chicken (off the bone) up to 3 months. Reheat gently in a 325°F oven or a skillet with a splash of broth so it stays juicy.
