Substitutions:

  • Rice: Swap white rice for brown rice, quinoa, or cauliflower rice for a lower-carb option
  • Chicken: Use chicken thighs for more flavor and juiciness, or swap for grilled shrimp or carnitas
  • Beans: Pinto beans work great if you don't have black beans
  • Dairy-Free: Skip the cheese and sour cream, or use dairy-free alternatives
  • Gluten-Free: This recipe is naturally gluten-free—just check your spice labels

Storage: Store components separately in airtight containers in the refrigerator for up to 4 days. Keep wet toppings (tomatoes, salsa) separate from dry ingredients to prevent sogginess.

Make-Ahead: Cook the rice and chicken up to 3 days ahead. Chop veggies the night before. Reheat chicken and rice before assembling. This is an EXCELLENT meal prep recipe—make a big batch on Sunday for easy lunches all week!

Freezing: Cooked chicken freezes well for up to 3 months. Rice can be frozen but may be slightly less fluffy when thawed. Don't freeze fresh toppings.
