Substitutions:

  • Chicken: Boneless chicken breasts work but cook faster (reduce simmer time to 5-6 minutes)
  • Cream: Full-fat coconut milk for dairy-free (adds slight coconut flavor)
  • Tomatoes: Crushed tomatoes instead of diced for smoother sauce
  • Spice level: Add more cayenne or 1/2 tsp red chili flakes for extra heat
  • Butter: Ghee works great and adds authentic flavor

Storage: Store in an airtight container in the refrigerator for up to 4 days. The flavors actually get better overnight! Reheat gently on the stovetop or in the microwave, adding a splash of water or cream if the sauce thickens too much.

Make-Ahead: You can prep the chicken (cut and season) up to 24 hours ahead. The sauce can be made 2 days in advance—just reheat and add the cream before serving. This recipe also freezes beautifully for up to 3 months (freeze without cream, add it when reheating).
