Fantastic Fried Rice Recipe

Here’s a delicious fried rice recipe that’s versatile, flavorful, and easy to make. Perfect for using up leftover rice and veggies!

Ingredients

  • 2 cups cooked rice (best if chilled, day-old rice works well)
  • 2 tbsp vegetable oil or sesame oil (for added flavor)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced bell pepper (optional)
  • 2 eggs beaten
  • 3 tbsp soy sauce (or to taste)
  • 1/2 tsp sesame oil (optional for extra flavor)
  • 1/4 tsp white or black pepper
  • Salt to taste
  • Green onions for garnish, chopped

Optional Add-ins

  • Cooked chicken, shrimp, tofu, or pork
  • Other veggies: corn, mushrooms, broccoli, or bean sprouts

Instructions

  1. Prep the Rice: Make sure the rice is cold, as this helps prevent it from becoming mushy. Use a fork to break up any clumps.
  2. Cook the Vegetables:
    • In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
    • Add the onion, garlic, carrots, and bell pepper, and stir-fry for 3-4 minutes until softened.
    • Add the peas and stir-fry for another 2 minutes. To one side of the skillet, push the vegetables.
  3. Scramble the Eggs:
    • Add a little more oil to the empty side of the skillet.
    • Add the whisked eggs and scramble them until they are well cooked.
    • Combine the eggs with the vegetables.
  4. Fry the Rice:
    • Increase the heat to high, add another tablespoon of oil if needed, then add the rice to the skillet.
    • Stir continuously for about 3-4 minutes, ensuring the rice is evenly heated and lightly crispy.
  5. Season:
    • Add soy sauce, sesame oil, pepper, and salt to taste.
    • Mix well, ensuring the rice is evenly coated.
  6. Serve:
    • Garnish with chopped green onions and enjoy!
