Ingredients

  • 1 cup granulated sugar
  • 2 large eggs, room temperature

  • 3 ripe bananas, mashed

For the Filling & Topping:

  • 1 cup heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1-2 bananas, thinly sliced
  • Optional: Crushed graham crackers or walnuts for topping

For the Frosting (Optional Cream Cheese Frosting):

  • 1 cup cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Cake Layers:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and mashed bananas.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

2. Make the Whipped Cream Filling:

  • In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Keep it in the refrigerator until ready to use.

3. Optional Cream Cheese Frosting:

  • In a bowl, beat together cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy. Refrigerate until ready to use.

4. Assemble the Cake:

  1. Place one cake layer on a serving plate. Spread a layer of whipped cream and top with sliced bananas.
  2. Place the second cake layer on top and repeat with whipped cream and more bananas.
  3. If using cream cheese frosting, frost the sides and top of the cake.
  4. Optionally, sprinkle with crushed graham crackers or walnuts for extra texture.

5. Chill and Serve:
